Tender - Crisp Spring Braise
From Better Homes and Gardens April 2009 - almost meatless - added sliced cooked leftover chicken - it was so good. I can post the recipe if anyone wants. Includes new potatoes, carrots, mushrooms, onions, garlic, asparagus. A great dish for a drizzly rainy day.
Tender Crisp Spring Braise
(Start to finish 50 minutes.)
3 Tbsp olive oil
8 oz. new potatoes, cut in 1/2 inch pieces
4 small new carrots, cut in 1 inch pieces
4 cups mushrooms, halved
1 large onion, cut in thin wedges
3 cloves garlic, peeled and sliced
1 lb. asparagus, trimmed and cut in 1 1/2 inch pieces
2 skinless boneless chicken thighs, cut in strips ( I used left over already cooked chicken pieces)
1/2 tsp salt
1/4 tsp pepper
3/4 cup reduced sodium chicken broth
1 Tbsp snipped fresh tarragon, (I used 1/2 tsp dried)
In extra-large nonstick frypan, heat 2 Tbsp oil over medium-high heat. Evenly layer potatoes and carrots in skillet. Cook, uncovered, 5 minutes, until potatoes are golden, turning once. Add mushrooms and onions. Cook 5 to 6 minutes, until vegetables are tender crisp, stirring often. Add garlic and asparagus; cook 3 minutes.
Transfer vegetables to a bowl, set aside.
In same skillet, heat remaining oil, add raw chicken strips, cook three minutes, until lightly browned, turning and stirring occasionally. Add broth; bring to boiling, reduce heat and cook three minutes until chicken no longer pink. Stir in cooked vegetables; heat through. Stir in tarragon, salt and pepper.
Instead of cooking the raw chicken I just added the cooked chicken pieces to the cooked vegetables, stirred in the chicken broth and heated thoroughly, then added the spices. It was very good and only 266 calories per serving (1/4 of the recipe).
Chicken and Summer Vegetable Tostadas
COOKING LIGHT
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons canola oil
12 ounces chicken breast tenders
1 cup chopped red onion (about 1)
1 cup fresh corn kernels (about 2 ears)
1 cup chopped zucchini (about 4 ounces)
1/2 cup green salsa
3 tablespoons chopped fresh cilantro, divided
4 (8-inch) fat-free flour tortillas
Cooking spray
1 cup (4 ounces) shredded Monterey Jack cheese
Preheat broiler.
Combine first 3 ingredients, stirring well. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle the spice mixture evenly over chicken. Add chicken to pan; saute for 3 minutes. Add onion, corn, and zucchini to pan; saute for 2 minutes or until chicken is done. Stir in salsa and 2 tablespoons cilantro. Cook 2 minutes or until liquid almost evaporates, stirring frequently.
Working with 2 tortillas at a time, arrange tortillas in a single layer on a baking sheet; lightly coat tortillas with cooking spray. Broil 3 minutes or until lightly browned. Spoon about 3/4 cup chicken mixture in the center of each tortilla; sprinkle each serving with 1/4 cup cheese. Broil an additional 2 minutes or until cheese melts. Repeat procedure with remaining tortillas, chicken mixture, and cheese. Sprinkle each serving with about 3/4 teaspoon of remaining cilantro. Serve immediately.
